Typical czech pies - Česke koláče

Today I would like to share with you, how to make a typical czech pies like from my oma :) Its not difficult to do, only thing whitch is kind a annoying is that you have to wait for dough risin'. Hopefully u ll enjoy.


 INGREDIENTS DOUGH:
500g fine grained flour
250g sugar
2 pcs. egg yolks
100 ml oil (better sunflower than olive)
50g yeast/instant yeast
250ml milk (room temperature or warmer)
and ... a little bit of salt

INGREDIENTS TOPPINGS:
Poppy seed
200g grained poppy seed
240ml milk
300g sugar
1tbls. fresh lemon juice

Cheese
  • 455g cream cheese, softened                           
  • 100g sugar or more to taste 
  • 1 vannila sugar
  • 2 large egg yolks
Wallnuts
200g grained wallnuts
240ml milk
300g sugar
1tbls. fresh lemon juice

Apples
3 bigger apples
100ml water
100g sugar
1tbls. fresh lemon juice
1tbls. cinamon

EGG WASH INGREDIENTS:                    DROBENKA INGREDIENTS:
  • 1 large egg, beaten                            60g sugar
  • 1 tsp cream, milk,                               60g semi-coarse flour 
  •                                                               60g butter
HOW TO:
In a small bowl or measuring cup, dissolve the yeast in ¼ cup milk. If using instant yeast, do not dissolve it yet-- reserve. In a large bowl, combine the yeast mixture with the all remaining ingrediences. If using instant yeast, add it now. Knead the dought on a lighthly floured surface until smooth and springy (about 5 mins) – if needed, add some flour to make it workable dough.
Place in an oiled bowl and turn to coat and cover with kitchen towel and let it rise in warm place (2 – 3 hours). After punch down the dough, knead briefly, divide in small balls, put it  on parchment paper-lined or greased baking sheets about 2 inches apart and start to make regular cake shapes. Fill it with the filling, use drobenka if needed (used for fruit filling – helps fruit to stay in requiered form). Brush the edges with the egg wash.
Preheat the oven to 200°C and bake until golden brown.



FILLINGS:
Poppy seed
In a medium saucepan, combine the poppy seeds, milk, sugar, lemon juice and optional rum. Simmer over a medium-low heat, stirring frequently, until the mixture thickens, about 10 minutes. Let cool.
Cheese
In a medium bowl, beat the cheese and vanila sugar until smooth. Blend in the yolks.
Wallnuts
In a medium saucepan, combine grounded wallnuts, milk, sugar, and optional rum. Simmer over a medium-low heat, stirring frequently, until the mixture thickens, about 10 minutes. Let cool.
Apples (u can try also different fruits like appricots or cherries – but its not typicall)
Boil scaled and sliced apples in a small pot together with a bit of water, sugar and cinnamon – boil till the mixture is soft (about 5 mins).  Let cool.

TO MAKE DROBENKA:

In a medium bowl, combine the sugar, flour, and optional cinnamon. Using a fork or your fingers, stir in the butter to make fine crumbs.
