Czech dumplings

Let me introduce u my most favourite czech type of dumplings - ball shaped - in czech "chlupate knedliky" (translation: hairy dumplings). For your big suprise - no human or dog hair is included :D


INGREDIENTS:
200g coarse flour
500g potatoes 
1pcs. egg
salt



HOW TO:
Peel the potatoes and divide them in thirds. Let 1/3 boil (whole pcs.) and while waiting grate the other 2/3 raw potatoes and squeeze out as much moisture out as you can. 
When the first third is boiled, grate it too and mix it together with grated raw potatoes. Add flour, one egg, bit of salt and make the dough. Dough should be sticky. 

Start to boil water in big pot and meanwhile do the dumplings (ball shape) from the dough. When you re finished, put the dumplings into boiling water. When they start to floats (about 5 mins), its finished. 

You can serve it just with bacon and cabbage, but I personaly love them as sidedish to roasted duck (typical czech preparation).
